Risotto is a wonderful Italian rice dish. In Milan they make it with saffron. The golden color is beautiful and the rich taste is delicious. The creaminess comes from the rice. This recipe has no heavy cream or butter in it. We also add scallops, shrimp, or mushrooms for added flavor.
