Naples Style Pizza at Home

Naples is considered the birthplace of pizza. It started in the late 1700’s. Early pizzas had things like tomatoes, cheese, anchovies and garlic on them. In 1889 after Italy became unified, King Umberto & Queen Margherita visited Naples. Chef Raffaele Esposito of Pizzeria Brandi and his wife created a new pizza for the Queen and named it after her. It was to have the colors of the Italian flag: Red – tomato sauce, Green – Basil and White – Mozzarella Cheese.

This pizza was not known outside of Naples until around 1940’s. Today it can be found all over the world. The original style, still made in Naples, uses a wood burning oven (between 600 & 750 F), 00 pizza flour, live yeast, fresh basil, EVOO and buffalo mozzarella cheese. It is thin crusted and light. Each person gets a whole pizza, which is NOT sliced and eats it with a fork and knife or takes a slice in the streets of Naples in paper. It was street food for the poor.

 

ORIGINAL NAPLES PIZZA RECIPE:

Making the dough:

Mix flour, water, salt and yeast. Pour a liter of water into a dough making machine, dissolve 50-55 g of salt, add 10% of the total amount of flour you are planning to use, then dissolve 3g of yeast, and start mixing gradually adding the remaining 1.8 Kg flour until the dough reaches the desired texture and consistency, defined as “Il Punto di Pasta”, smooth to the touch and very extensible .

Rising:

Let the dough rest on a marble slab or a wooden surface for 2 hours covered with a damp cloth and then divide into individual ball-shaped portions of 180 grams each.

Set aside in a container to rise for a second time for 4-6 hours at room temperature.

Rolling:

Use your hands and with a round motion roll out the dough on a marble slab covered with flour until it becomes 3 mm thick with a 1-2 cm edge.

Filling:

Take about 60g to 70g of chopped tomatoes and using a wooden spoon place in the center of the disk of dough.  With a spiraling motion, spread the tomato over the surface.  Then add a pinch of salt on the tomatoes, 80 – 100 g of DOP buffalo mozzarella, cut into strips and some basil leaves. Again with a spiraling motion starting from the centre, add 4 to 5 grams of extra virgin olive oil.

Cooking:

Cook in a wood- brick oven at a temperature between 450C° to 480C°, rotating the position of the pizza frequently to make sure the heat is spread evenly.

Eating method:

Use your hands and enjoy the taste of Italy!

 

Our Pizza:

Often, we make our own dough, but today we were testing some prepared doughs from both Trader Joes and Publix Supermarket. We also make our own pizza sauce from marzano tomatoes, but sometimes you just have to have a quicker alternative:

We brought the dough to room temperature, divided it into two balls and let it rest for 10 minutes. Then on a floured surface, we pressed the dough out in all directions from the center to form a circle. You then grab a side of the dough and pull out and fold back over your hand to increase the size of the pie. This is continued all around the pie several times until it is the size you want (around 10”). The center should be paper thin and thicker around the edges. The Trader Joe’s dough was the best to work with and had the best results, forming a larger pie without tearing. The Publix dough was a bit more delicate, but also made a very good pizza.

Next ladle some sauce on pie in center and spread it out in circles around pie. Then season the sauce with Parmesan cheese and garlic (if desired). Next place the fesh basil and finally the Buffalo Mozzarella cheese. Then sprinkle some EVOO (Extra Virgin Olive Oil) over the top.

Pre heat your oven to 500-550 with a good quality pizza stone in it. After it reaches temperature wait another 15 minutes to allow stone to reach the temperature. Use a pizza Peel to slide the pie onto the stone. It should only take about 5-6 minutes to cook. The edges should be brown and check bottom so it doesn’t get to dark.

The crust edges should be crispy but the bottom center should be soft. Take pie out of oven and let sit for 10-15 minutes before slicing or serve whole like in Italy.

If you are doing a second pie, allow oven to reach temperature again before putting it in.

The Wonderful Foods of Italy

There is a lot to say about the food of Italy and its all good. Except for very touristy places, the food is fresh, well prepared and delicious. Italians love their food and so does the rest of the world. You may think you know Italian cooking because you eat in Italian restaurants in England or America or your parents were Italian but it is not the same as what is served in Italy.

Italy’s restaurants serve local fresh foods usually organic. The dishes are simple but extremely tasty. It may be a simply cooked meat or fish over a grill fire or a pasta cooked al dente with a wonderful sauce or fresh vegetables. You can eat well in any non touristy ristorante or Trattoria. These places pride themselves in the food they prepare and serve.

Campania, Italy

Campania is in southern Italy below Rome. It includes famous areas like Naples and the Amalfi Coast. Campania has wonderful Blue Flag Beaches and some very interesting mountain towns. You have everything thing here including: museums, beaches, mountains, great food & wine and friendly people.

We chose this area to have a second home and have fallen in love with it. Come walk with us through several towns in the great region.

Naples, Italy

Naples is one of Italy’s main cities. Many Italian-Americans came from Naples or the surrounding areas. Naples is famous for pizza and tomato sauce on pasta. It has an old section, castles, a Pantheon and a sea port. It also has a dangerous view of Mount Vesuvius. It is an old city with a vibrant life and style. Come to walk the old part of the city or to stop and have a pizza. This VLOG is based on a one day stop in Naples on our way to Pompeii. This is NOT enough time to spend in this great city. We will do a future VLOG on exploring the old section and sites.

From Naples you can easily travel by ferry to Capri or Sorrento. If you have a car, drive the fantastic Amalfi Coast from Sorrento to Salerno with stops at Positano and Amalfi. You can get to Naples by car on the A1 Autostrada from Rome or on a high-speed train from Rome or Salerno. This is a very beautiful part of Italy.

Bufala Mozzarella

Bufala Mozzarella is a cheese made from the milk of the Italian water buffalo. It is a product of Italy, in the region of Campania and mainly from the provinces of Caserta and Salerno. It is a fresh delicious cheese that is soft and milky. It is typically stored in water to keep it fresh. It is never refrigerated. We have a home in the province of Salerno so there is a lot of Bufala Mozzarella around us. Along the road from the A3 Autostrada to Agropoli there are many places that make it. In every town there is someone who sells it.

This is the way mozzarella cheese was meant to be. If you are in Campania, try it. Feel the softness of its texture, taste the flavor and enjoy a really great cheese. We love it with fresh picked tomatoes and a little olive oil but on a panini (sandwich) it is also great. It is one of the many things we look forward to when we arrive back in this region of Italy. It is the main these of Naples in Campania and is used on pizza in this region.

Is it Time for you to Take a Trip to Italy?

Have you longed for a trip to romantic Italy? Have you dreamed about eating real Italian food? Do you long to see the museums or architecture? Maybe you have relatives there and just want to reunite old ties. What ever your reasons are, Italy is a great place to spend a vacation. After a week you are feeling relaxed and enjoying life. After two weeks you are totally relaxed, speaking some Italian words and loving the food. Longer periods in Italy will make you an Italian for life!

The northern lake Area offers beautiful scenery overlooking the Alps or maybe Tuscany with its wines and romantic scenery. The large cities of Milan, Venice, Florence, Rome or Naples are great places to see Italians being themselves. They also are great for seeing living history. Look at the buildings the architecture and envision the people that built these great cities. Maybe southern Italy with its Amalfi coast and Capri or farther south into the Cilento National Park. Beauty unspoiled by man and pristine beaches. What is stopping you?

If it’s being afraid of big tours or doing it on your own, we offer an alternative for the selective traveler to see what they want to see and spend as much time as the want. If you find a great Italian spot, the last thing you want is to be taken away by a tour bus. It would be wonderful to change your plans and just stay in your new found location. Italy is all about love, romance, beauty and spontanaeity.

Italy creates many wonderful memories and experiences but you have to touch it! Get away from the crowded tourists areas and meet real Italians. See places that will change you forever. Don’t eat in tourists restaurants. These will be memories you will never forget.

The Reasons I Love Italy

Italy has a special place in my heart. I am not Italian but I did a lot of work there. I gained a respect and a love for the country, the people, the food and the wine. Italians seem happy with there life. They know what is important. Their families, their life , their food & wine are all very important to them. They have to work but it is not a important part of their lives. Walk any Italian city (big or small) and you will see the elderly and the young walking. They enjoy fresh fruit and vegetables. They love their cooking especially mamma’s cooking. Their coffee, wine, gelato and bread are a tradition to them. You can here them argue about how good or bad the pasta is at a restaurant. It will never be mamma’s pasta.IMG_3189

As I walk through a city, I smell the cooking. I see the people outside all around me. I hear the language and the passion with which it is spoken. This is the Italy I so love. People are very friendly here. Just say Buon Giorno to a stranger and watch the smile appear and you will get a Buon Giorno back. If you are trying to speak the language remember there are informal and polite forms of speaking. The young are becoming less formal but the elderly still require a stranger to speak formally.

  • Come Sta – How are you (formal)
  • Come Stai – How are you (informal)
  • Ciao – Hello (informal)
  • Buon Giorno – Hello (Literally Good Morning – Formal)

Be respectful, smile and enjoy all that your senses are experiencing. I even enjoy seeing Italian laundry out to dry. No I don’t have a laundry fetish! I enjoy the colors and shapes against a backdrop of old buildings. It is one of my favorite photo op. In Italy you can buy a dryer but most people prefer the clean scent of drying their clothes outside.

In the morning I enjoy being in the local bar for coffee and a cornetto. You are submerged in a group of Italians, all talking and quickly drinking their coffee and eating a small cake or cornetto.

As you leave after breakfast, you are again engulfed in Italian life on the streets. Listen and watch how they talk and communicate with each other. Enjoy the scooters speeding by you. Take in the smells as you pass a restaurant. Later stop in a bar, pizzeria or trattoria for lunch. Bars are famous for eating standing up. It costs more to take a table. You will see Italians eating Panini (sandwiches) and drinking a beer or glass of wine. Between about 2 pm and 4 pm watch the Italian Passeggiata (walk). Families and friends stroll together to enjoy each others company.

After your afternoon walking or visiting museums, look for a large piazza. Life really explodes in the Italian piazzas. You will find lots of bars and restaurants here as well. Pick a non touristy place for dinner. I always look for one with mostly Italians and few or no foreigners. You will have to eat late to see Italians as no one eats dinner early in Italy.

Walking Rome

When Jo Anne and I were in Rome (Jo’s first trip to Italy but I had been there many times), we wanted to really experience the city. There is no better way than walking! Rome has excellent metro and bus services that will get you anywhere you want but walking lets you be a Roman. You experience this great city first hand. All the important sites are walkable if you can walk a few miles.

We stayed centrally at Hotel Trevi just around the corner from the Trevi fountain. This is a hard hotel to find even with some cab drivers but worth a stay. It has been getting more popular and the price is going up. From Trevi fountain you can easily see:

  • Spanish Steps and shopping by the steps
  • Villa Borghese
  • Pantheon
  • Trastevere
  • Vatican City
  • Castel San Angelo
  • Forum
  • Old Rome
  • Coliseum
  • Piazza Navona
  • Basilica San Clemente

As you walk to these wonderful tourist attractions, take in the buildings, architecture, streets and people around you. Stop in a bar for a coffee or glass of wine. Hear the motorcycles and scooters all around you. Listen to the music of the Italian language. This is Rome! This is Italy! It must be enjoyed on the streets with the people.

Never stop in a tourist restaurant (any place very close to one of the above attractions). Seek out small family run trattoria that are full of locals enjoying their meal. People eat later in Italy than in the states (except large cities like New York).

Breakfast is usually at a bar on the run. You have a coffee and sweet roll or cake as you catch up on gossip and sports with friends. Lunch is at a pizzeria or trattoria and is taken around 1 or 2 pm. Dinner is much later around 8 or 9 in Rome. Farther south dinner can be as late as 11 pm. Restaurants will open for tourists around 7 or 7:30 pm. The terrible tourist only places stay open all day.

I love strolling these ancient streets, meeting modern-day Romans and partaking in their ancient customs. Let Rome take you away. Enjoy it fully. Don;t be afraid of it. There are pick-pockets everywhere but violent crime is very rare. As you return to your hotel, review what you did that day. Relive each important moment. These are memories you will enjoy for the rest of your life.

Fast Food when you Travel? Really?

International Cuisine is not fast food!. Many travelers look for McDonald’s, KFC, Pizza Hut and other American fast food chains when they travel. I have news for you, Fast Food is NOT cuisine! If you go to a foreign country and eat American Fast Food, you are missing out on the true gems of that country. Countries like Italy have unbelievably good food. It is NOT the same as Italian food in America. It is soooo much better. Go, see, experience and enjoy the food and wine.

Fruits & vegetables in these countries are so fresh and ripe. You can smell them and the taste is so delicious. Fish is wild caught and meats are raised and fed properly. Everything tastes great the way it was intended to taste.

In addition to the raw ingredients, the recipes are old and delicious. In Italy you don’t find heavy sauces or a dish with 17 different ingredients. Dishes are simple and stand on the taste of the one or two main ingredients.

I suggest that you try different things when traveling in Italy. Even if you don’t think you like it. This is how you expand your taste buds. There is no better place in the world to do this than Italy.

My memories are of the bread, coffee, gelato, pasta, pastries, pizza, fish, truffles, buffalo mozzarella and wine of Italy.

Pizza … Pizza

There is no denying it … Pizza is BIG in Italy! In the north you get different cheeses and prosciutto, in the south you have Naples style Margarita pizza. New York style thin crust is really Naples style pizza. Where we live in Campania, it is all about Naples style pizza. It is very thin, very tasty and they use buffalo mozzarella for the cheese. It is very delicious. They don’t usually sell it by the slice but in pies that are designed to be a large personal pizza.

Pizza in a real Italian restaurant is not sliced for you. You eat it with a fork (forchetta) and knife (coltello). Of course in Italy, you have your pizza with a good glass of red wine. Pizzas are typically done in fired ovens to make them crispy.

Jo Anne and I make pizza at home. It is the Neapolitan style of pizza but sometimes with different toppings. We use a pizza stone and an oven at 525 degrees F. The pizza crust gets crisper than in Italy but we like it that way. Pizza shouldn’t be loaded with cheese! I think we do that in America because the tastes are bland and cheese is a comfort food. In Italy you can actually taste the sauce and basil. You can even smell it as it is presented to you. It tastes so good you don’t want to over ride the flavors with too much cheese.
